A cup of tea is not the same without a slice of cake. But why not double up the tea expercience and make a cake with matcha powder? It doensn’t only make your cake look more spectaculair with a light green colour, it also adds some good qualities to your cake!
PREPARATION 10 minutes BAKING 45 minutes
- 175g (roomtemprature) unsalted butter
- 175g caster sugar
- 3 eggs
- 175g self-rising flour
- 1 tablespoon baking powder
- two tablespoons matcha powder
Preheat heat the oven to 180°C (356°F).Decide in what cake pan you would like to bake your cake. You can choose any kind (heart shaped, bundt pan, round,…) and butter it to prevent it from sticking to the cake pan.
Put all the ingredients into a large bowl and start mixing. Rumour: make sure the butter is soft, that way the dough won’t become crumbly. Beat till the dough is smooth and creamy.
Pour the batter into two bowls.
In one of the two bowls you have to add the matcha powder.
Stir till your batter gets a light green colour.
Now you have a bowl with natural yellow-coloured batter and a bowl with light green-coloured batter.
Pour the natural batter into the cake pan, scoop the matcha batter on top.
Grab a knife or fork and swirl it carefully around into the dough. You will create the marble effect.
Put the cake pan into the oven and bake it on the middle shelf for about 45 minutes. When the cake is ready (insert a toothpick into the center of the cake, it should come out clean) take it out of the oven.
Let it rest in the cake pan for a few minutes. Run a knife gently around the edge of the cake. Turn the cake pan upside down to take out your matcha cake. Put the cake on a plate to cool down. Cut the cake into pieces. Feel free to decorate with caster sugar and red fruit.
